Abstract

This lecture in biochemistry discusses the structure and function of starches such as glycogen and amylose, and structural molecules such as cellulose and chitin. Other topics mentioned include maltase, maltose, amylase. Also some of the genetic changes that occurred as wolves evolved into dogs are mentioned.
